A 30g tub of Pectolase by Handcraft Supplies. Pectolase can be used in winemaking to remove pectin haze in wines or ciders, creating a clearer product. It can also be used to increase juice extraction when mashing fruit. Follow the instructions on the label: add 1g (approximately 1 third of a teaspoon) per 4.5 litres of liquid, mix well and leave to stand until clear. For juice extraction: add to must/mash at a rate of g (approximately 1 third of a teaspoon) per kg fruit and leave to stand at 40-50 degrees centigrade for 1 hour - lower temperatures may require longer standing times.
