Acid blend kit by Almost Off Grid. Acid blend for winemaking can be bought ready made but it's easy to make your own. It is made up of 3 acids: citric acid, malic acid and tartaric acid. Because citric acid is cheaper than the other two, inexpensive acid blends tends to be bulked up with more citric acid. If you make your own acid blend then you know what's in it. It is simple to make your own blend by mixing 3 parts Tartaric acid, 2 parts Malic acid and 1 part Citric acid. So for example you could mix 1 1/2 tsp Tartaric Acid, 1 tsp Malic Acid & 1/2 tsp Citric. Then use your homemade acid blend in the following quantity: 1/4 - 1/2 teaspoon per 4.5 litres of grape juice, or in whatever quantity your recipe calls for. Of course you can also use the three acids separately in homebrewing recipes. Tartaric Acid - 50g tub. Tartaric acid is an organic acid in crystal form that occurs naturally in many fruits, including grapes. If your homemade wine doesn't have enough tartaric acid it can lack flavour. If you open a bottle of well-aged red wine, you may find red crystals on the cork or stuck on the side of the bottle and this is usually a good indicator that the wine will taste soft and full of flavour. Tartaric acid plays an important role in lowering the pH to a level where some bacteria which could spoil your wine cannot live. It can also act as a preservative when fermentation is finished. Tartaric Acid can be added to juice, homemade wine or cider to achieve the acidity you want. Malic Acid - 50g tub. Malic Acid can be added to juice or wine/cider as required to achieve target acidity. Follow the instructions on the label: add to juice or made wine/cider as required to achieve target acidity. As a guide, 0.9g per litre (approximately 3/4 of a teaspoon per 4.5 litres) will add approximately 1 ppt acidity as tartaric acid equivalent. Citric Acid - 100g tub.
